Grilled Chicken with Curry Sauce
Ingredients
1 whole chicken, cut into 8 pieces
1 teaspoon lime juice
1 teaspoon salt
2 sprigs curry leaves
3 lime leaves, midribs removed
1 lemongrass, smashed
2 teaspoons salt
1 tablespoon brown sugar,chopped
750 ml coconut milkfrom 1/2 coconuts
ground spices blend:
6 large red chili peppers
4 curly red chili peppers
7 cloves shallot
4 cloves garlic
3 cm turmeric,toasted
3 cm ginger
2 cm galangal
Cooking Steps
- Marinate chicken with lime juice and salt. Let it set for 10 minutes.
- Boil the mixture of coconut milk, ground spices blend, curry leaves, lime leaves and lemongrass. Stir it continuously until bubbling and fragrant.
- Add chicken, salt, and sugar. Cook it until the chicken is soft and the liquid is absorbed to the chicken. Remove it from heat.
- Grill chicken on a grilling pan until fragrant. Glaze it with the remaining sauce while grilling it. Remove it from heat.
- Grilled Chicken with Curry Sauce is ready to be served.
