Grilled Chicken with Red Sauce
Ingredients
1 broiler chickens,cut into 10 parts
1 teaspoon lime juice
1 teaspoon salt
3 tablespoons cooking oilfor sautéing
2 salam (indonesian bay)leaves
2 cm galangal,crushed
600 ml coconut milkfrom 1 coconut
1/2 tablespoon salt
1 tablespoon brown palm sugar
1/4 teaspoon white pepper powder
ground spices blend:
8 cloves shallot
4 cloves garlic
4 large red chili peppers,toasted
8 curly red chili peppers,toasted
4 candlenuts, toasted
1 teaspoon terasi (shrimp paste),toasted
Cooking Steps
- Marinate chicken with lemon juice and salt. Grill chicken until half-done. Set it aside.
- Heat cooking oil on the pan. Sauté ground spices blend, salam leaves, and ginger until fragrant.
- Add in coconut milk, salt, brown sugar, and pepper. Stir well. Cook until boiling.
- Add chicken. Lower the heat. Cook chicken until the liquid is absorbed into the chicken and all the ingredients are cooked. Remove it from heat.
- Grill chicken until fragrant and browned. While grilling, glaze it with the remaining sauce.
- Remove it from heat.
- Grilled Chicken with Red Sauce is ready to serve.
