Ayam Bakar Taliwang (Taliwangnese Grilled Chicken)
Ingredients
1 whole free-range chicken,butterflied
1 teaspoon lime juice
1 teaspoon salt
550 ml coconut milkfrom 1/2 coconuts
1/2 tablespoon salt
1 teaspoon brown palm sugar,chopped
3 tablespoons cooking oilfor frying
ground spices blend:
8 cloves shallot,toasted
6 cloves garlic,toasted
2 large red chili peppers,toasted
8 curly red chili peppers,toasted
4 candlenuts, toasted
1 teaspoon terasi (shrimp paste),toasted
Cooking Steps
1. Marinate chicken with lime juice and salt. Grill it until the chicken is half-done. Set aside.
2. Saute ground spices blend until fragrant. Add in coconut milk, salt, and sugar. Cook until boiling. Add chicken. Cook over low heat until the chicken is well-done and the liquid is absorbed into the chicken.
3. Grill chicken until it is fragrant. Glaze it with the remaining seasoning while grilling it.
4. Taliwang Grilled Chicken is ready to serve.
