Sweet and Spicy Grilled Chicken
Ingredients
1/2 chicken, cut into 4 parts
1/2 teaspoon lime juice
2 salam (indonesian bay)leaves
2 cm ginger,smashed
1 stalk lemongrass(white part only), crushed
1 tablespoon sweet soy sauce
1/2 teaspoon salt
2 teaspoons brown palm sugar,chopped
150 ml water
2 tablespoons cooking oilfor sautéing
ground spices blend:
5 cloves shallot
2 cloves garlic
3 red bird’s eye chili peppers
5 curly red chili peppers
2 candlenuts, toasted
1 teaspoon coriander seeds
1/4 teaspoon cumin
glaze ingredients (stirred):
3 tablespoons sweet soy sauce
1 teaspoon cooking oil
3 red bird’s eye chili pepper,sliced
Cooking Steps
- Marinate chicken with lime juice. Set aside.
- Heat cooking oil on the pan. Sauté ground spices blend, salam leaves, ginger, and lemongrass until fragrant.
- Add chicken. Stir until the color changes. Add in sweet soy sauce, salt, and sugar. Stir until chicken coated with sauce. Pour in water. Cook until liquid is absorbed into meat. Let it cool. Store braised chicken in fridge.
- Thaw chicken before grilling it. Grill chicken while glazing it until chicken is fragrant and browned. Remove it from heat.
- Sweet and Spicy Grilled Chicken is ready to serve.
