Ayam Betutu (Balinese Betutu Grilled Chicken)
Ingredients
1 whole chicken
100 grams young cassava leaves,boiled, drained, and chopped
3 tablespoons cooking oil
1 whole banana leaf,cut into wrapper.
ground spices blend:
12 cloves shallot
4 cloves garlic
5 red chili peppers
4 red bird’s eye chili peppers
6 candlenuts
1 cm galangal
4 cm turmeric
1 cm ginger
5 cm lemongrass
1 teaspoon terasi (shrimp paste),toasted
1 tablespoon coriander seeds,toasted
½ teaspoon nutmeg powder
2 cm sand ginger
2½ teaspoons salt
Cooking Steps
- Mix well ground spices blend with cooking oil. Marinate chicken with half of the mixture.
- Mix well the remaining ground spices blend mixture with cassava leaves. Stuff chicken with spiced cassava leaves.
- Wrap chicken with banana leaf wrappers. Steam it over medium heat for 40 minutes until cooked. Remove it from heat.
- Grill wrapped chicken until the leaves are browned and the chicken is well-done and fragrant. Remove it from heat.
- Ayam Betutu (Balinese Betutu Grilled Chicken) is ready to serve.
