Ayam Bakar Lumajang (Lumajangnese Grilled Chicken)
Ingredients
1 chicken, cut into 8 pieces
½ tablespoons lime juice
2 cm galangal,crushed
1 lemongrass (white part only),crushed
1½ teaspoons salt
½ tablespoon brown palm sugar,chopped
200 ml water
3 tablespoons cooking oilfor sautéing
ground spices blend:
5 large red chili peppers
8 red bird’s eye chili peppers
8 cloves shallot
5 cloves garlic
1 teaspoon coriander seeds
1 teaspoon terasi (shrimp paste)
Cooking Steps
- Crush chicken with meat mallet or pestle until it is soft and thinned. Marinate it with lime juice. Let it set for 30 minutes. Fry it until crusted. Remove from heat.
- Heat cooking oil on the pan. Saute ground spices blend, galangal, and lemongrass until fragrant. Add chicken. Stir it well. Add in water, salt, and brown palm sugar. Cook it until well done.
- Grill chicken until browned and fragrant. Remove from heat.
- Serve Ayam Bakar Lumajang (Lumajangnese Grilled Chicken) with sambal.
