The combination of lime leaves, pandan leaves, and other spices makes this dish so fragrant and delicious. ayam bakar woku (manadonese grilled chicken) will be even more tempting when served with warm white rice and fresh vegetables.

Ayam Bakar Woku (Manadonese Grilled Chicken)

Ingredients

1 (850 grams) chicken,butterflied, pressed
10 lime leaves, midribs removed,shredded
4 pandan leaves,knotted
1 turmeric leaves,knotted
4 lemongrass (white part only),crushed,
75 grams lemon basil leaves
5 scallions, cut into 1 cm pieces
1 tomato, cut into chunks
600 ml water

ground spices blend:
12 cloves shallot
6 red bird’s eye chili peppers
2 cm turmeric,toasted
3 cm ginger
10 candlenuts, toasted
1½ teaspoons salt
¼ teaspoon sugar

Cooking Steps

  1. Marinate chicken with 1 tablespoon lime juice and 1 teaspoon salt
  2. Mix well ground spices blend, lime leaves, pandan leaves, turmeric leaves, lemongrass, lemon basil, scallion, tomato, and half of the water.
  3. Add chicken. Cook it until boiling. Pour the remaining water gradually. Cook it until the liquid is reduced and absorbed into the chicken.
  4. Grill chicken until well done and fragrant. Glaze it with the remaining sauce while grilling it. Remove it from heat.
  5. Ayam Bakar Woku (Manadonese Grilled Chicken) is ready to be served.
