Ayam Bakar Woku (Manadonese Grilled Chicken)
Ingredients
1 (850 grams) chicken,butterflied, pressed
10 lime leaves, midribs removed,shredded
4 pandan leaves,knotted
1 turmeric leaves,knotted
4 lemongrass (white part only),crushed,
75 grams lemon basil leaves
5 scallions, cut into 1 cm pieces
1 tomato, cut into chunks
600 ml water
ground spices blend:
12 cloves shallot
6 red bird’s eye chili peppers
2 cm turmeric,toasted
3 cm ginger
10 candlenuts, toasted
1½ teaspoons salt
¼ teaspoon sugar
Cooking Steps
- Marinate chicken with 1 tablespoon lime juice and 1 teaspoon salt
- Mix well ground spices blend, lime leaves, pandan leaves, turmeric leaves, lemongrass, lemon basil, scallion, tomato, and half of the water.
- Add chicken. Cook it until boiling. Pour the remaining water gradually. Cook it until the liquid is reduced and absorbed into the chicken.
- Grill chicken until well done and fragrant. Glaze it with the remaining sauce while grilling it. Remove it from heat.
- Ayam Bakar Woku (Manadonese Grilled Chicken) is ready to be served.
