Green Chili Grilled Chicken
Ingredients
1 chicken, cut into 10 pieces
2 salam (indonesian bay)leaves
5 lime leaves, midribs removed,shredded
2 lemongrass (white part only),crushed
2 cm galangal,crushed
2 cm ginger,crushed
2 teaspoons salt
¼ teaspoon white pepper powder
½ teaspoon sugar
750 ml water
3 tablespoons cooking oilfor sautéing
coarsely ground spices blend:
8 cloves shallot
4 cloves garlic
5 large green chili peppers
3 curly green chili peppers
4 green bird’s eye chili peppers
Cooking Steps
- Heat cooking oil on the pan. Saute coarsely ground spices blend, salam leaves, lime leaves, lemongrass, galangal, and ginger until fragrant.
- Add in chicken. Stir until it changes color. Add salt, pepper, and sugar. Stir well.
- Pour in water gradually. Cook it until the chicken is well done while the liquid is reduced and absorbed into the chicken.
- Grill chicken until browned and well-cooked. Turn it over occasionally to help it cooked evenly. Remove it from heat.
- Serve Green Chili Grilled Chicken with its remaining sauce.
