Ayam Bakar Pencok (Sundanese Grilled Chicken)
Ingredients
1 chicken, cut into 4 pieces
500 ml coconut milkfrom ½ coconut
6 sprigs lemon basil leaves
1 teaspoon tamarind juicefrom ½ teaspoon tamarind and ½ teaspoon water
ground spices blend:
8 cloves shallot
6 cloves garlic
4 large red chili peppers
¼ teaspoon white pepper powder
3 candlenuts, toasted
2 cm sand ginger
2 teaspoons salt
1 teaspoon sugar
Cooking Steps
- Boil chicken in the mixture of coconut milk and ground spices blend until the liquid is reduced and absorbed into the meat.
- Add lemon basil. Stir well. Cook it until the chicken is well done.
- Grill chicken over a charcoal grill until browned. Keep glazing it with the remaining sauce while grilling it. Remove from heat.
