Indonesian grilled chicken does not always have to be associated with sweet soy sauce glaze. ayam bakar pencok (sundanese grilled chicken) from west java has different spices blend in it yet it tastes as delicious as your usual grilled chicken.

Ayam Bakar Pencok (Sundanese Grilled Chicken)

Ingredients

1 chicken, cut into 4 pieces
500 ml coconut milkfrom ½ coconut
6 sprigs lemon basil leaves
1 teaspoon tamarind juicefrom ½ teaspoon tamarind and ½ teaspoon water

ground spices blend:
8 cloves shallot
6 cloves garlic
4 large red chili peppers
¼ teaspoon white pepper powder
3 candlenuts, toasted
2 cm sand ginger
2 teaspoons salt
1 teaspoon sugar

Cooking Steps

  1. Boil chicken in the mixture of coconut milk and ground spices blend until the liquid is reduced and absorbed into the meat.
  2. Add lemon basil. Stir well. Cook it until the chicken is well done.
  3. Grill chicken over a charcoal grill until browned. Keep glazing it with the remaining sauce while grilling it. Remove from heat.
  4. Ayam Bakar Pencok (Sundanese Grilled Chicken) is ready to serve.
