Ayam Panggang Paniki (Ternatenese Roasted Chicken)
Ingredients
1 chicken, cut into 10 parts
1 tablespoon tamarind juice
2 tablespoons sweet soy sauce
1 teaspoon salt
1 teaspoon brown sugar
300 ml water
2 scallions, cut into 1 cm pieces
2 tablespoons cooking oilfor sautéing
ground spices blend:
12 cloves shallot
5 large red chili peppers
2 curly red chili peppers
3 red bird’s eye chili peppers
1 teaspoon terasi (shrimp paste)
Cooking Steps
- Marinate chicken with tamarind juice. Squeeze chicken a bit while marinating it. Let it set for 20 minutes.
- Heat cooking oil on the pan. Sauté ground spices blend until fragrant, Add chicken. Stir until it changes color.
- Pour water in. Add salt and brown sugar. Cook it until boiling and the liquid is absorbed into the chicken. Remove it from heat.
- Roast chicken in 190oC preheated oven for 35 minutes until well done and browned. Remove it from heat.
- Ayam Panggang Paniki (Ternatenese Roasted Chicken) is ready to serve.
