Grilled Chicken with Spicy Lemon Basil Sambal
1 chicken, cut into 8 pieces
1 tablespoons tamarind juicefrom 1 teaspoon tamarind dissolved in 1 tablespoons water
2 teaspoons salt
1/4 teaspoon white pepper powder
1 tablespoon sugar
½ teaspoon coriander seeds powder
4 tablespoons sweet soy sauce
ground spices blend:
5 cloves shallot
3 cloves garlic
2 cm ginger
spicy lemon basil sambal ingredients:
6 large red chili peppers,finely sliced
5 red bird’s eye chili peppers,finely sliced
8 cloves shallot,sliced
2 tomatoes, deseeded
1½ teaspoons salt
1 teaspoon sugar
2 sprigs lemon basil leaves
1 teaspoon jeruk limau (sambal lime) juice
5 tablespoons cooking oilfor sautéing
1. Stir well ground spices blend, tamarind juice, salt, pepper, sugar, coriander seeds, and sweet soy sauce. Set it aside.
2. Poke holes around chicken using a skewer. Marinate it with the spice mixture. Let it set for 30 minutes in refrigerator.
3. Grill it until cooked. Turn it over occasionally while grilling it to help it cooked evenly. Keep glazing it with the remaining spice mixture while grilling it.
4. Remove it from heat. Set it aside.
4. Spicy sweet basil sambal: Heat cooking oil. Sauté red chili pepper, bird’s eye chili pepper, tomato, salt, and sugar until fragrant. Add lemon basil and sambal lime juice. Stir well.
5. Serve grilled chicken with spicy lemon basil sambal.
