Bobor Bayam (Spinach Coconut Soup)
Ingredients
1 bunch spinach(leaves and young stems only)
750 ml coconut milkfrom ¼ coconut
1 salam (indonesian bay)leaf
2 cm galangal,crushed
ground spices blend:
4 cloves shallot
2 cloves garlic
¼ teaspoon coriander seeds
2 cm sand ginger
½ teaspoon sugar
½ teaspoon salt
shrimp paste sambal ingredients:
6 curly red chili peppers,fried
3 cloves shallot,fried
1 teaspoon terasi (shrimp paste),fried
1 teaspoon sugar
¼ teaspoon salt
Cooking Steps
1. Sambal Terasi: grind curly red chili peppers, shallots, terasi, salt, and sugar. Set it aside.
2. Boil coconut milk, ground spices blend, salam leaf, and galangal until fragrant and bubbling.
3. Add in spinach. Stir occasionally until the spinach is tender and the liquid is reduced. Remove it from heat.
4. Serve Bobor Bayam (Spinach Coconut Soup) with shrimp paste sambal.
