Sayur godog labu (chayote coconut soup) is a vegetable dish usually served in islamic holy festival dinner. it will be even better when served with shrimp crackers or peyek (peanut crackers).

Sayur Godog Labu (Chayote Coconut Soup)

Ingredients

100 grams carrot,sliced into matchsticks
100 grams chayote squash,sliced into matchsticks
100 grams pumpkin,sliced into matchsticks
100 grams cabbage,sliced into small squares
10 hard-boiled quail eggs
2 salam (indonesian bay) leaves
2 cm galangal,crushed
3¼ teaspoons salt
½ tablespoon brown palm sugar,finely chopped
1.000 ml coconut milkfrom 1 coconut
5 bilimbis, cut into 1 cm pieces
1 teaspoon ebi (dried shrimp),soaked in hot water, roasted, ground
1 tablespoon tamarind juicefrom 1 teaspoon tamarind dissolved in 2 tablespoons water

ground spices blend:
3 large red chili peppers
2 curly red chili peppers
12 cloves shallot
6 cloves garlic
2 cm turmeric

Cooking Steps

  1. Bring the mixture of coconut milk, ground spices blend, salam leaves, galangal, salt, pepper, and coconut sugar to boil.
  2. Add in pumpkin. Cook it until tender. Add carrot, chayote squash, and pumpkin. Cook it until boiling. 
  3. Add quail egg, cabbage, bilimbi, and tamarind juice. Cook it until all ingredients are well-done. Remove it from heat.
  4. Sayur Godog Labu (Chayote Coconut Soup) is ready to serve.
