Coconut milk soup is usually served with sliced rice cakes. however, you can also enjoy it with white rice. this sayur godog tahu (tofu & vegetables coconut soup) can be an option for your lunch today.

Sayur Godog Tahu (Tofu & Vegetables Coconut Soup)

Ingredients

5 yardlong beans, cut into 3 cm strips
150 grams carrot,sliced
3 cabbage leaves, sliced
150 grams chayote squash,sliced
250 grams white chinese firm tofu,cubed
1 salam (indonesian bay)leaf
2 cm galangal,crushed
4 large green chili peppers,finely sliced diagonally
1,250 ml coconut milkfrom ½ coconut
2½ teaspoons salt
2 teaspoons brown palm sugar
2 tablespoons cooking oilfor sautéing

ground spices blend:
2 cloves garlic
6 cloves shallot
1 tablespoon terasi (shrimp paste),toasted
5 curly red chili peppers
2 large red chili peppers
3 candlenuts, toasted

Cooking Steps

  1. Heat cooking oil in the pan. Sauté ground spices blend, salam leaf, and galangal until fragrant.
  2. Add green chili peppers. Stir it until they are slightly softened. 
  3. Pour in coconut milk. Cook it until boiling. Add yardlong beans, carrot, cabbage, chayote squash, and tofu. Cook it until the ingredients are slightly softened. 
  4. Add in salt and brown palm sugar. Cook until boiling and all ingredients are cooked. Remove it from heat.
  5. Sayur Godog Tahu (Tofu & Vegetables Coconut Soup) is ready to serve.
