Chayote Squash and Green Chili Stir-Fry
Ingredients
400 grams chayote squash,julienned into big matchsticks
6 green chili peppers,sliced diagonally
7 cloves shallot,sliced
3 cloves garlic,sliced
2 salam (indonesian bay)leaves
2 cm galangal,crushed
1/2 tablespoon ebi (dried shrimps),soaked in hot water, drained
1 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon white pepper powder
25 grams paddy oatyoung leaves
200 ml water
3 tablespoons cooking oilfor sautéing
Cooking Steps
- Heat cooking oil in the pan. Sauté shallot, garlic, salam leaves, galangal, green chili pepper, and ebi until fragrant.
- Add in chayote squash. Stir it until tender.
- Add salt, sugar, and pepper. Stir well.
- Pour in water. Stir well. Add paddy oat leaves. Stir it until all ingredients are well-cooked. Remove it from heat.
- Chayote Squash and Green Chili Stir-Fry is ready to serve.
