Bobor Bayam Jagung (Spinach & Corn Coconut Soup)

Ingredients

2 bunches spinach(leaves and young stems only)
1 corn, kernelled
200 grams chayote squash,cubed into 2x2x2 cm pieces
2 salam (indonesian bay)leaves
2 cm galangal,crushed
800 ml coconut milkfrom ½ coconut
1 tablespoon salt
1 tablespoon brown sugar
500 ml water

ground spices blend:
4 cloves shallot
2 cloves garlic
1/2 teaspoon coriander seeds
1 cm sand ginger

Cooking Steps

1. Bring water to boil. Add salam leaves, galangal, and spices blend. Cook it until fragrant.
2. Add in coconut milk. Add salt and brown sugar. Stir well. Cook it until boiling. Stir it occasionally when cooking.
3. Add corn kernels and chayote squash. Boil it until half done.
4. Add spinach. Cook it until all ingredients are well done. Remove it from heat.
5. Bobor Bayam Jagung (Spinach & Corn Coconut Soup) is ready to serve.
