Fried Vegetable-Stuffed Tofu

Ingredients

10 yellow tofu, halved
cooking oil for frying

filling ingredients:
50 grams spinach,boiled, roughly chopped
50 grams carrot,grated
50 grams spanish mackerel fillet,minced
25 grams sago starch
2 tablespoons iced water
2 white eggs
1 teaspoon fish sauce
1 teaspoon salt
1/4 teaspoon white pepper powder
1/4 teaspoon sugar
1 scallion, finely sliced
1 clove garlic,ground into paste

dipping ingredients:
2 eggs, beaten

coating ingredients (mixed):
100 gram all-purpose flour
1 tablespoon corn starch
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon white pepper powder

Cooking Steps

1. Filling: Mix spinach, carrot, spanish mackerel, iced water, egg whites, fish sauce, salt, pepper powder, sugar, scallion and garlic. Add sago starch. Blend it well.
2. Take one tofu. Spread filling ingredients on top of it and cover it with another piece of tofu.
3. Steam it over medium-heat for 20 minutes until cooked.
4. Dip it into the beaten egg whites. Roll it into the coating ingredients mixture until it is fully coated.
5. Fry stuffed tofu over medium heat until crispy and golden brown. Remove it from heat.
6. Fried Vegetable-Stuffed Tofu is ready to serve.
