Chicken Coconut Soup

Ingredients

1/2 whole chicken, cut into 10 parts
100 grams straw mushroom,halved
2 lemongrass, sliced diagonally
2 cm galangal,crushed
1 salam (indonesian bay)leaf
3 lime leaves, midribs removed
10 red bird’s eye chili peppers
3 green tomatoes, halved
2 teaspoons salt
1/4 teaspoon white pepper powder
1/2 teaspoon sugar
2 teaspoons lime juice
750 ml water
200 ml coconut milkfrom 1/2 coconut

ground spices blend:
3 cloves garlic,fried quickly
2 dried red chili peppers,fried quickly
1/2 tablespoon ebi (dried shrimps),toasted

Cooking Steps

  1. Boil the mixture of ground spices blend, water, chicken, lemongrass, galangal, salam leaf, and lime leaves until bubbling and fragrant.
  2. Add red bird’s eye chili pepper, green tomato, salt, pepper, sugar, and lime juice. Cook until chili pepper and green tomato is slightly softened.
  3. Add straw mushroom. Cook it until the liquid is boiling. Add coconut milk. Cook it until all ingredients are well done. Remove it from heat.
  4. Chicken Coconut Soup is ready to serve.
