This bamboo shoots coconut soup recipe is such a must-try. the taste and aroma is very appetizing. however, there is a little trick on cooking this dish. to get rid of bamboo shoots’ smell, boil bamboo shoots along with salam leaves before cooking it.

Savory Bamboo Shoots Coconut Soup

Ingredients

200 grams bamboo shoots,sliced into half-round pieces
100 grams chayote squash,julienned
50 grams small shrimps,peeled, leaving its tail on
1 salam (indonesian bay)leaf
2 cm galangal,crushed
2 large red chili peppers,finely sliced diagonally
2 1/2 teaspoons salt
1 teaspoon sugar
1,000 ml coconut milkfrom 1 coconut
2 tablespoons cooking oilfor frying

ground spices blend:
5 cloves shallot
3 cloves garlic
3 candlenuts, toasted
1 cm turmeric,toasted

Cooking Steps

  1. Heat cooking oil on the pan. Sauté ground spices blend, salam leaf, galangal, and red chili pepper until fragrant.
  2. Add in shrimp. Stir until it changes color.
  3. Add bamboo shoots, chayote squash, salt, and sugar. Stir well.
  4. Pour in coconut milk. Cook until well done.
  5. Bamboo Shoots Coconut Soup is ready to serve.
