Chinese Okra and Snow Pea Clear Soup

Ingredients

2 chinese okras, sliced into 1 cm thick coins
1 corn, kernelled
50 grams snow peas,trimmed
4 cloves shallot,finely sliced
2 salam (indonesian bay)leaves
2 cm finger root,crushed
2 teaspoons salt
4 teaspoons sugar
2 tablespoons crispy shallotfor garnish
2,000 ml water
Cooking Steps

  1. Bring water to boil. Add shallot, bay leaves, and finger root. Boil it until fragrant.
  2. Add corn kernels. Boil until cooked. Add Chinese okra, snow peas, salt and sugar. Cook it until the vegetables are softened.
  3. Sprinkle it with crispy shallot. Stir well. Remove it from heat.
