Yellow Vegetable Sour Soup
Ingredients
1/2 chayote squash, cut into chunks
100 grams string beans,cut into 3 cm strips
2 sweet corns, cut into 2 ½ cm chunks
100 grams paddy oat
25 grams paddy oat leaves,separated from the stems
2½ tablespoons tamarinddissolved in 3 tablespoons of water
2 tablespoons salt
1 tablespoon brown palm sugar,chopped
3 salam (indonesian bay)leaves
3 cm galangal,crushed
2,500 ml chicken stock
ground spices blend:
4 candlenuts, toasted
6 cloves shallot
3 cm turmeric,toasted
1/2 teaspoon terasi (shrimp paste),toasted
Cooking Steps
1. Bring chicken stock to boil. Add ground spices blend, salt, brown sugar, salam leaves, galangal, and paddy oat. Boil it until all ingredients are well-cooked.
2. Add sweet corn. Cook it until well-cooked.
3. Add string beans and chayote squash. Cook it until slightly softened.
4. Add paddy oat leaves and tamarind juice. Stir well. Remove it from heat.
