Daging Bumbu Betutu (Beef with Balinese Sauce)
Ingredients
500 grams tenderloin beef,cut into 4x4 cm square
100 grams cassava leaves,boiled until tender, squeezed, chopped
6 lime leaves, shredded
2 lemongrasses, crushed
1 teaspoon salt
½ teaspoon sugar
1000 ml water
4 tablespoons cooking oilfor sautéing
ground spices blend:
10 cloves shallots
4 cloves garlic
10 green bird’s eye chili peppers
3 candlenuts, toasted
1 teaspoon terasi (shrimp paste)
½ tablespoon coriander seeds
2 cm galangal
2 cm ginger
3 cm turmeric
2 cm sand ginger
Cooking Steps
- Heat cooking oil on the pan. Saute ground spices blend, lime leaves, and lemongrass until fragrant.
- Add beef. Stir it until it changes colour.
- Add in salt and sugar. Stir it well. Pour in water. Cook until the sauce is thickened and the beef is tender.
- Add in cassava leaves. Cook until the liquid is absorbed into the ingredients and the sauce is thickened and reduced. Remove it from heat.
- Daging Bumbu Betutu (Beef with Balinese Sauce) is ready to serve.
