Kalio Daging (Padangnese Beef Curry)
Ingredients
500 grams beef shank,cut into small pieces
1,500 ml coconut milkfrom 1 coconut
2 turmeric leaves
2 lemongrass, crushed
3 lime leaves, midribs removed
2 green chili peppers,cut into 1 cm pieces
2 asam kandis
1¾ teaspoons salt
½ tablespoon sugar
¼ teaspoon white pepper powder
ground spices blend:
6 curly red chili peppers
8 cloves shallot
2 cm turmeric,toasted
2 cm ginger
1 cm galangal
½ teaspoon coriander seeds
Cooking Steps
- Bring water to boil. Add ground spices blend, turmeric leaves, lemongrass, lime leaves, and green chili pepper until fragrant. Add in beef. Stir well.
- Pour in coconut milk. Stir it continuously until boiling. Add salt, sugar, and white pepper. Cook it just until the sauce is reduced into yellowish thick curry. Remove from heat.
- Kalio Daging (Padangnese Beef Curry) is ready to serve.
