Kalio Daging (Padangnese Beef Curry)

Ingredients

500 grams beef shank,cut into small pieces
1,500 ml coconut milkfrom 1 coconut
2 turmeric leaves
2 lemongrass, crushed
3 lime leaves, midribs removed
2 green chili peppers,cut into 1 cm pieces
2 asam kandis
1¾ teaspoons salt
½ tablespoon sugar
¼ teaspoon white pepper powder

ground spices blend:
6 curly red chili peppers
8 cloves shallot
2 cm turmeric,toasted
2 cm ginger
1 cm galangal
½ teaspoon coriander seeds

Cooking Steps

  1. Bring water to boil. Add ground spices blend, turmeric leaves, lemongrass, lime leaves, and green chili pepper until fragrant. Add in beef. Stir well.
  2. Pour in coconut milk. Stir it continuously until boiling. Add salt, sugar, and white pepper. Cook it just until the sauce is reduced into yellowish thick curry. Remove from heat.
  3. Kalio Daging (Padangnese Beef Curry) is ready to serve.
