Spiced Fried Beef
Ingredients
500 grams beef shank,cut widely into thick pieces
3 lime leaves, midribs removed
2 salam (indonesian bay)leaves
2 cm galangal,crushed
2 teaspoons salt
1 tablespoon brown palm sugar,finely chopped
1,500 ml coconut milkfrom ½ coconut
1 tablespoon tamarind juicefrom 1 teaspoon tamarind and 2 tablespoons water
2 tablespoons cooking oilfor sautéing
ground spices blend:
8 cloves shallot
3 cloves garlic
3 red chili peppers
1 teaspoon coriander seeds
2 cm ginger
¼ teaspoon white pepper powder
Cooking Steps
- Boil the mixture of coconut milk, ground spices blend, lime leaves, and galangal until fragrant.
- Add beef. Stir it until it changes color.
- Add in salt, brown sugar, and tamarind juice. Cook until the beef is tender while the sauce is reduced and absorbed into the beef. Remove beef from its sauce.
- Fry beef until it is slightly browned. Remove it from heat.
- Spiced Fried Beef is ready to serve.
