Bacem Daging (Indonesian Sweet Beef)
Ingredients
600 grams beef shank,cut into 10 pieces with 1 cm thickness each
2 cm ginger,crushed
1 salam (indonesian bay)leaf
2 cm galangal,crushed
1 teaspoon tamarind juicefrom ½ teaspoon tamarind dissolved in 1 tablespoon water
500 ml coconut water
cooking oil for frying
ground spices blend:
4 cloves shallot
2 cloves garlic
¾ teaspoon coriander seeds
1¼ teaspoon salt
25 grams brown palm sugar,finely chopped
Cooking Steps
- Bring coconut water to boil. Add beef, ginger, salam leaf, galangal, tamarind juice, and ground spices blend. Cook it over medium heat until the beef is well done while the liquid is reduced and absorbed into the beef. Remove it from heat.
- Fry beef over medium heat until browned. Remove from heat.
- Bacem Daging (Indonesian Sweet Beef) is ready to serve.
