Beef Stew with Potato and Tofu Skin
Ingredients
400 grams beef shank,cut into 2 ½ cm cube
250 grams potato,cut into 2 ½ cube, fried until crusted
100 grams tofu skin
5 cloves garlic,finely chopped
3 cloves shallot,finely chopped
2 cm ginger,finely chopped
2 tablespoons taoco manis(sweet fermented soybean paste)
1 tablespoon light soy sauce
½ teaspoon sugar
750 ml beef stock
1 teaspoon sesame oil
2 small scallions, cut into ½ cm pieces for garnish
1 tablespoon cooking oilfor sauteing
Cooking Steps
- Saute garlic, shallot, and ginger until fragrant.
- Add in beef. Stir until it changes colour. Add in taoco, light soy sauce, and sugar. Stir well. Add potato and tofu skin. Stir well.
- Pour in beef stock gradually. Cook it until the solid ingredients are well done while the sauce is reduced and blended well with all ingredients.
- Slightly before removing it from heat, add in sesame oil. Stir well. Remove from heat. Serve it with a sprinkle of scallion.
