Chili and Green Tomato Beef Stir-Fry
Ingredients
300 grams beef shank,cooked in high-pressure cooker,
8 cloves shallot,coarsely ground
2 cloves garlic,coarsely ground
50 grams curly green chili pepper,coarsely ground
5 green tomato, wedged into small pieces
1 cm ginger,crushed
2 cm galangal,crushed
2 salam (indonesian bay)leaves
1 teaspoon salt
½ teaspoon white sugar
250 ml beef stock
2 tablespoons cooking oilfor sautéing
Cooking Steps
- Heat cooking oil on the pan. Saute shallot, garlic, green chili pepper, green tomato, ginger, galangal, and salam leaves until fragrant.
- Add in beef shank. Stir well.
- Add salt and sugar. Stir well. Pour in beef stock gradually. Cook until all ingredients are well cooked and the liquid is infused to the solid ingredients. Remove it from heat.
- Chili and Green Tomato Beef Stir-Fry is ready to serve.
