White Radish and Beef Soup

This refreshing soup made from beef broth is even more nutritious with white radish. the tender beef tetelan and soft glass noodles in this dish is also a perfect match. you can enjoy this white radish and beef soup as it is or pair it with a plate of white rice for fulfilling lunch and dinner.

White Radish and Beef Soup

Ingredients

100 grams beef tetelan(meat, fat, and tendon scraped from beef bone)
1 white radish, sliced into round thin pieces
2 carrots, sliced to 1 cm thick pieces
20 grams glass noodles,soaked in water
1 garlic, finely chopped
2 cm ginger,finely chopped
1 scallion, cut into 1 cm pieces
1 celery, sliced
3½ teaspoons salt
1½ teaspoons sugar
¼ teaspoon white pepper powder
½ teaspoon nutmeg powder
1,700 ml water
2 tablespoons cooking oilfor sautéing
2 tablespoons crispy shallot
3 limes for garnish
Cooking Steps

  1. Bring water to boil. Add beef tetelan. Cook it until tender. Reduce the broth into 1500 ml.
  2. Heat cooking oil on the pan. Saute garlic and ginger until fragrant.
  3. Pour it into the tetelan soup. Bring it to boil. Add white radish and carrot. Cook until slightly tenderized.
  4. Add scallion, celery, salt, pepper, sugar, and nutmeg. Cook until boiling. Remove from heat. Serve it with glass noodles, crispy shallot, and limes.
  5. White Radish and Beef Soup is ready to serve.
