Sop Daging Berempah (Spiced Beef Clear Soup)
Ingredients
400 grams beef shank or brisket,cut into pieces
2,500 ml water
200 grams potato,cut into 2x2 cm cubes
200 grams carrot,sliced into coins
1 tomato, cut into small pieces
½ teaspoon nutmeg powder
3 cm cinnamon
3 cloves
2 cardamom pods
2 star anise
2 tablespoons salt
2¾ teaspoons sugar
25 grams glass noodles,soaked in water
2 scallions, cut into 1 cm pieces
2 tablespoons cooking oilfor sautéing
3 celery, knotted
ground spices blend:
7 cloves shallot
4 cloves garlic
1 teaspoon white peppercorn
sides:
100 grams paddy oat chips,fried
2 tablespoons crispy shallot
Cooking Steps
- Bring water to boil. Add beef. Cook it until tender. Remove beef from heat and reduce the broth into 1750 ml. Put beef back to the broth and bring them to boil.
- Heat cooking oil on the pan. Sauté ground spices blend, nutmeg powder, cinnamon, cloves, cardamom, and star anise until fragrant.
- Pour it into beef soup. Add salt and sugar. Cook it until boiling.
- Add in potato, carrot, and tomato. Cook them until softened. Slightly before removing soup from heat, add glass noodles, scallions, and celery. Stir well. Remove it from heat. Serve it with emping and a sprinkle of crispy shallot.
