Spicy Grilled Beef with Bamboo Sticks

Ingredients

500 grams beef,cut into 4x4x1 cm pieces
2 teaspoons coriander seeds powder
¼ teaspoon cumin powder
½ teaspoon white pepper powder
3 cloves
2 cm cinnamon
¼ teaspoon nutmeg powder
1 lemongrass (white part only),crushed
500 ml coconut milkfrom 1 coconut
1½ teaspoons salt
1 teaspoon sugar
1 teaspoon tamarind juicefrom 1 teaspoon tamarind dissolved in 1 tablespoon water
2 tablespoons cooking oilfor sautéing
thin bamboo tongs for grilling

ground spices blend:
2 cm turmeric,toasted
2 large red chili peppers
2 curly red chili peppers
3 cloves garlic
6 cloves shallot
2 cm ginger
1 cm galangal

Cooking Steps

  1. Rub beef with the mixture of coriander seeds powder, cumin powder, white pepper powder, cloves, cinnamon, and nutmeg powder. Let it set for 20 minutes.
  2. Heat cooking oil on the pan. Sauté ground spices blend and lemongrass until fragrant. Add beef. Stir it until it changes color.
  3. Pour in coconut milk. Add salt and sugar. Cook it over low heat until the liquid is thickened and the beef is tender.
  4. Add tamarind juice. Stir well. Remove from heat. Grip beef between the pair of tongs and secure the end. 
  5. Grill beef until fragrant and cooked. Glaze it with the remaining sauce while grilling it. Remove it from heat.
