Spicy Grilled Beef with Bamboo Sticks
Ingredients
500 grams beef,cut into 4x4x1 cm pieces
2 teaspoons coriander seeds powder
¼ teaspoon cumin powder
½ teaspoon white pepper powder
3 cloves
2 cm cinnamon
¼ teaspoon nutmeg powder
1 lemongrass (white part only),crushed
500 ml coconut milkfrom 1 coconut
1½ teaspoons salt
1 teaspoon sugar
1 teaspoon tamarind juicefrom 1 teaspoon tamarind dissolved in 1 tablespoon water
2 tablespoons cooking oilfor sautéing
thin bamboo tongs for grilling
ground spices blend:
2 cm turmeric,toasted
2 large red chili peppers
2 curly red chili peppers
3 cloves garlic
6 cloves shallot
2 cm ginger
1 cm galangal
Cooking Steps
- Rub beef with the mixture of coriander seeds powder, cumin powder, white pepper powder, cloves, cinnamon, and nutmeg powder. Let it set for 20 minutes.
- Heat cooking oil on the pan. Sauté ground spices blend and lemongrass until fragrant. Add beef. Stir it until it changes color.
- Pour in coconut milk. Add salt and sugar. Cook it over low heat until the liquid is thickened and the beef is tender.
- Add tamarind juice. Stir well. Remove from heat. Grip beef between the pair of tongs and secure the end.
- Grill beef until fragrant and cooked. Glaze it with the remaining sauce while grilling it. Remove it from heat.
