Sambal Goreng Bola Daging (Spicy Meatball Stew)

Ingredients

meatball ingredients:
350 grams ground beef
¼ teaspoon white pepper powder
¼ teaspoon salt

fried sambal ingredients:
2 salam (indonesian bay)leaves
3 cm galangal,crushed
2 lime leaves, midribs removed, shredded
1 teaspoon salt
1 tablespoon brown sugar
400 ml coconut milkfrom ½ coconut
2 tablespoons cooking oilfor sautéing

ground spices blend:
1 teaspoon terasi (shrimp paste),toasted
3 curly red chili peppers
3 large red chili peppers
5 cloves shallot
3 cloves garlic
2 candlenuts

Cooking Steps

  1. Meatballs: Mix well all ingredients. Form it into small balls. Heat 1 tablespoon cooking oil. Sauté meatballs until it changes color. Set aside.
  2. Heat cooking oil on the pan. Saute ground spices blend, salam leaves, galangal, lime leaves, and large chili pepper until fragrant.
  3. Add in meatballs. Stir well.
  4. Pour in coconut milk. Add salt and brown sugar. Cook until done while the liquid is absorbed into the ingredients. Remove from heat.
  5. Sambal Goreng Bola Daging (Spicy Meatball Stew) is ready to serve.
