Dendeng Batokok (Green Chili Beef Jerky)

Ingredients

500 grams tenderloin beef
2 asam kandis
1,000 ml water
cooking oil for frying

ground spices blend:
5 cloves garlic
1 tablespoon coriander seeds
2 cm ginger
2 teaspoons salt

sambal ingredients:
12 cloves shallot
15 large green chili peppers
4 green tomatoes, quartered into small wedges
3 lime leaves, midribs removed
2 teaspoons salt
100 ml water
2 tablespoons cooking oilfor sautéing

Cooking Steps

  1. Marinate beef with asam kandis and ground spices blend. Boil until tender. Remove from liquid.
  2. Slice beef thinly along the grain. Crush it until evenly thinner and widened. Put it on a dish.
  3. Fry beef until dried. Drain it.
  4. Sambal: coarsely grind shallots, green chili peppers, and tomato. Sauté it along with lime leaves until fragrant and softened. Add salt and pepper. Cook it over low heat until slightly dried.
  5. Add beef. Stir it until the beef is coated with sambal. Remove from heat.
  6. Dendeng Batokok (Green Chili Beef Jerky) is ready to serve.
