Dendeng Balado

(Chili Beef Jerky)

This is a spicy and savory dish made from beef topside.the crunchiness of this dendeng balado (chili beef jerky) makes a good combination when paired with a plate of fluffy and hot rice.

Dendeng Balado (Chili Beef Jerky)

Ingredients

500 grams beef topside,thinly sliced along the grain
1 tablespoon tamarind juice(from ½ teaspoon tamarind dissolved in 2 tablespoons water)
cooking oil for frying

balado (chili pepper sauce) ingredients:
6 lime leaves, midribs removed
1 teaspoon salt
¼ teaspoon sugar
1 tablespoon tamarind juice(from 1 teaspoon tamarind dissolved in 2 tablespoons water)
100 ml cooking oilfor sautéing

coarsely ground spices blend:
6 cloves shallot
15 large red chili peppers
7 curly red chili peppers

Cooking Steps

  1. Preheat oven into 140oC.
  2. Mix beef with tamarind juice. Squeeze it repeatedly to help the tamarind juice infused to the beef.
  3. Put beef in an ungreased baking dish. Bake it in the preheated oven for 5 minutes until the liquid is absorbed into the meat and dried. Let it cool.
  4. Fry beef until done. Set aside.
  5. Heat cooking oil on the pan. Sauté coarsely ground spices blend until fragrant. Add beef, salt, and sugar. Stir well. Add tamarind juice. Stir well. Remove from heat.
  6. Dendeng Balado (Chili Beef Jerky) is ready to serve.
