Dendeng Balado (Chili Beef Jerky)
Ingredients
500 grams beef topside,thinly sliced along the grain
1 tablespoon tamarind juice(from ½ teaspoon tamarind dissolved in 2 tablespoons water)
cooking oil for frying
balado (chili pepper sauce) ingredients:
6 lime leaves, midribs removed
1 teaspoon salt
¼ teaspoon sugar
1 tablespoon tamarind juice(from 1 teaspoon tamarind dissolved in 2 tablespoons water)
100 ml cooking oilfor sautéing
coarsely ground spices blend:
6 cloves shallot
15 large red chili peppers
7 curly red chili peppers
Cooking Steps
- Preheat oven into 140oC.
- Mix beef with tamarind juice. Squeeze it repeatedly to help the tamarind juice infused to the beef.
- Put beef in an ungreased baking dish. Bake it in the preheated oven for 5 minutes until the liquid is absorbed into the meat and dried. Let it cool.
- Fry beef until done. Set aside.
- Heat cooking oil on the pan. Sauté coarsely ground spices blend until fragrant. Add beef, salt, and sugar. Stir well. Add tamarind juice. Stir well. Remove from heat.
- Dendeng Balado (Chili Beef Jerky) is ready to serve.
