Stir-Fried Prawn with Jerky Sauce
Ingredients
350 grams white prawn
1 clove garlic,ground
2 teaspoons coriander seeds,toasted, coarsely ground
1 salam (indonesian bay)leaf
1 cm galangal,crushed
1½ tablespoons sweet soy sauce
1 tablespoon brown palm sugar,finely chopped
½ teaspoon salt
2 dried chili peppers, finely chopped
2 tablespoons water
1 teaspoon tamarind juicefrom 1 teaspoon tamarind dissolved in 1 tablespoon water
1 tablespoon cooking oilfor sautéing
cooking oil for deep-frying
ground spices blend:
6 cloves shallot
2 cloves garlic
Cooking Steps
- Marinate white prawn with ½ teaspoon salt, ¼ teaspoon white pepper powder, and ground garlic. Let it set for 15 minutes. Deep fry it until done.
- Heat cooking oil on the pan. Sauté ground spices blend, coriander seeds, salam leaf, and galangal until fragrant. Add in brown sugar, sweet soy sauce, salt, dried chili pepper, water, and tamarind juice. Cook until the liquid is reduced and thickened.
- Add fried prawn. Stir until it is coated in sauce. Remove from heat.
