Beef Ribs and Curry Leaves Sour Soup
Ingredients
750 grams beef ribs,cut into small pieces, boiled
2 sprigs curry leaves,picked from the stems
6 red bird’s eye chili peppers,crushed
2 salam (indonesian bay)leaves
2 cm galangal,crushed
2 lemongrass stalks (white parts only),crushed
2 green tomatoes, cut into small pieces
5 bilimbis, crushed
2¼ teaspoons salt
½ teaspoon sugar
1,500 ml beef stock
coarsely ground spices blend:
7 cloves shallot,toasted
2 cloves garlic,toasted
6 cm turmeric,toasted
2 cm ginger
Cooking Steps
- Boil coarse spices blend, curry leaves, salam leaves, galangal, and lemongrass in beef stock until fragrant.
- Add beef ribs, bird’s eye chili pepper, tomatoes, and bilimbis. Cook it until softened.
- Add in salt and sugar. Cook until all ingredients are well-cooked. Remove it from heat.
- Beef Ribs and Curry Leaves Sour Soup is ready to serve.
