Lamb Satay with Spicy Soy Sauce
350 grams lamb meat,cut into 2x2x1 cm pieces
150 grams lamb fat,cut into 2x2x1 cm pieces
2 tablespoons sweet soy sauce
1 tablespoon cooking oil
30 bamboo skewers
ground spices blend:
1 tablespoon coriander seedspowder
3 curly red chili peppers
3 red bird’s eye chili peppers
½ teaspoon salt
spicy soy sauce ingredients (mixed well):
5 tablespoons sweet soy sauce
5 cloves shallot,finely sliced
8 green bird’s eye chili peppers,finely sliced
sides:
3 lontong (long rice cakes in banana leaves),cut into bite-sized pieces
2 red tomatoes, sliced
1. Mix lamb meat, lamb fat, ground spices blend, sweet soy sauce, and cooking oil. Squeeze it gently and repeatedly so that the spices blend absorbed into the meat. Let it set for 1 hour.
2. Skewer lamb meat along with the lamb fat with bamboo skewers.
3. Grill it until well done and fragrant. Glaze it with the remaining spices blend while grilling.
4. Put satay on a plate. Drench it with spicy soy sauce.
5. Lamb Satay with Spicy Soy Sauce is ready to serve. (yields 30 skewers)
