Gulai Kambing (Lamb Red Curry)
Ingredients
800 grams lamb meat,cut into thick rectangles
4 cloves
3 cm cinnamon
2 cardamoms
2 asam kandis
2 lemongrass (white parts only),crushed
5 lime leaves, midribs removed
2 salam (indonesian bay)leaves
2 cm galangal,crushed
2 cm ginger,crushed
2 teaspoons salt
¾ teaspoon white pepper powder
½ teaspoon sugar
1,500 ml coconut milkfrom 1 ½ coconut
2 tablespoons cooking oilfor sautéing
ground spices blend:
5 large red chili peppers,deseeded
12 cloves shallot
6 cloves garlic
1½ teaspoons coriander seeds,toasted
1/8 teaspoon nutmeg powder
1/8 teaspoon cumin,toasted
2 cm turmeric,toasted
3 candlenuts, toasted
Cooking Steps
1. Heat cooking oil on the pan. Sauté ground spices blend, cloves, cinnamon, cardamom, asam kandis, lemongrass, lime leaves, salam leaves, galangal, and ginger until fragrant.
2. Add in lamb meat. Stir it until it changes colour.
3. Add in coconut milk, salt, pepper, and sugar. Cook it over low heat until thickened. Remove it from heat.
4. Gulai Kambing (Lamb Red Curry) is ready to serve.
