There are many west sumateranese restaurants serve this gulai kepala ikan (yellow fish head curry) and it always becomes a favorite. however, you can actually cook this dish by yourself at home. just follow our recipe!

Gulai Kepala Ikan (Yellow Fish Head Curry)

Ingredients

4 medium red snapper heads,cleaned
1 tablespoon lime juice
1,250 ml coconut milkfrom 1 coconut
2 3/4 teaspoons salt
2 teaspoons sugar
1 lemongrass, crushed
2 cm galangal,crushed
1 turmeric leaf
5 lime leaves, midribs removed
2 tablespoons coconut oilfor sautéing

ground spices blend:
9 cloves shallot
3 cloves garlic
5 large red chili peppers
½ cm ginger
2 cm turmeric

Cooking Steps

1. Marinate fish head with lime juice. Let it set for 15 minutes.
2. Heat cooking oil on the pan. Sauté ground spices blend, lemongrass, galangal, turmeric, and salt. Pour in coconut milk. Cook it until boiling.
3. Add in fish head. Cook it over low heat until the fish head is well done and the sauce is oily. Remove it from heat.
4. Gulai Kepala Ikan (Yellow Fish Head Curry) is ready to serve.
