Ox brain can be cooked into a delightful dish. the savory and delicious flavor of gulai otak (yellow ox brain curry) makes it a perfect food to enjoy with a hot plate of rice.

Gulai Otak (Yellow Ox Brain Curry)

Ingredients

1 (300 grams) ox brain
1 teaspoon lemon juice
2 lemongrass (white parts only),crushed
6 lime leaves, midribs removed
4 shield aralia leaves,finely sliced
1 turmeric leaf
700 ml coconut leaffrom 1 coconut
2 asam kandis
10 holy basil leaves

ground spices blend:
10 cloves shallot
8 curly red chili peppers
2 cm galangal
3 cm turmeric,toasted
2 cm ginger
1 teaspoon coriander seeds
1½ teaspoons salt

Cooking Steps

1. Marinate brain in lemon juice. Clean it well. Steam it for 15 minutes until well done. Remove the vein and cut it into 6 pieces.
2. Boil ground spices blend, lemongrass, lime leaves, shield aralia leaves, and turmeric leaf in coconut milk. Keep stirring it until it is boiling.
3. Add in the brains and asam kandis. Cook until the liquid is reduced and absorbed into the brain. Add holy basil. Stir it well. Remove it from heat,
