Soto Sulung (Beef Turmeric Soup)
ingredients:
250 grams beef
250 grams beef tripe,boiled
250 grams beef lungs,boiled
2,000 ml water
2 salam (indonesian bay)leaves
3 lime leaves, midribs removed
2 cm galangal,crushed
1 teaspoon beef bouillon powder
1 teaspoon sugar
4 teaspoons salt
½ teaspoon white pepper powder
3 tablespoons cooking oilfor sautéing
ground spices blend:
8 cloves shallot
2 cm turmeric,toasted
2 cm ginger
complements:
2 tablespoons crispy shallot
3 eggs, hard-boiled, halved
2 scallions, finely sliced
2 celery, finely sliced
2 limes, wedged into small pieces
3 tablespoons sweet soy sauce
1. Bring water to boil. Add beef. Boil it until tender and the water is cloudy. Reduce the broth to 1,750 ml. Set it aside.
2. Cut meat, beef tripe, and beef lungs into cubes. Add it to the broth. Bring them to boil.
3. Sauté ground spices blend, salam leaves, lime leaves, and galangal until fragrant. Pour it into the broth.
4. Add beef bouillon powder, sugar, salt, and pepper. Cook it until all ingredients are well done.
5. Soto Sulung (Beef Turmeric Soup) is ready to serve with its complements.
