Soto Kudus (Spiced Chicken Clear Soup)
ingredients:
1 chicken, quartered
2,000 ml water
3 salam (indonesia bay)leaves
5 teaspoons salt
1 block chicken bouillon powder
1 teaspoon sugar
2 tablespoons cooking oilfor sautéing
ground spices blend:
8 cloves shallot
4 cloves garlic
½ teaspoon white peppercorn
complements:
4 tablespoons crispy garlic
150 grams mung bean sprouts
3 celery, finely sliced
3 limes
4 teaspoons sweet soy sauce
1. Bring water to boil. Add chicken. Cook it until the liquid is bubbling. Reduce the broth into 1,800 ml. Bring it to boil again.
2. Heat cooking oil on the pan. Sauté ground spices blend, salam leaves, galangal, lemongrass, and ginger until fragrant.
3. Pour it into the chicken soup. Add salt, chicken bouillon powder, and sugar. Cook it again until all ingredients are well-cooked. Remove chicken from the liquid. Shred it. Set it aside.
4. Put the complements and chicken in a bowl. Drench it with the soup.
