Plantain, Jackfruit, and Sweet Potato
Ingredients
300 grams yellow sweet potato,cut into pieces
2 plantains, cut diagonally
300 grams sugar
2 pandan leaves, knotted
100 grams kolang kaling(young palm fruit), boiled
50 grams jackfruit,halved lengthwise
1 teaspoon salt
1,500 ml water
1,000 ml coconut milkfrom 1 coconut
Cooking Steps
1. Boil water, sweet potato, and plantain until softened. Add in sugar and pandan leaves. Bring them to boil.
2. Add in kolang kaling. Cook it until the liquid is boiling and the kolang kaling is softened.
3. Add in jackfruit, salt, and coconut milk. Cook it while keep stirring it until the soup is infused to the solid ingredients. Remove it from heat.
4. Plantain, Jackfruit, and Sweet Potato "Kolak" Stew is ready to serve.
