Opor ayam (chicken coconut soup) is a mandatory menu in holy islamic festival along with ketupat (rice cakes in coconut leaves) and crackers. it is very tasty yet it does not require much effort to cook. are you curious about it? let’s cook it yourself at home!

Opor Ayam (Chicken Coconut Soup)

Ingredients

1 (1 kg) broiler chicken,cut into 10 pieces
2 salam (indonesian bay)leaves
2 cm galangal,crushed
3 lemongrass, crushed
3½ teaspoons salt
½ teaspoon white pepper powder
2 teaspoon brown sugar
750 ml coconut milkfrom the second press of 1 coconut
250 ml coconut creamfrom the first press of 1 coconut
2 tablespoons cooking oilfor sautéing

ground spices blend:
12 cloves shallot
3 cloves garlic
4 candlenuts, toasted
2 cm turmeric,toasted
2 teaspoons coriander seeds,toasted
1/8 teaspoon cumin

Cooking Steps

1. Sauté ground spices blend, salam leaves, galangal, ginger, and lemongrasses until fragrant.
2. Add chicken. Stir it until it changes colour.
3. Pour in coconut milk. Stir it well. Add in salt, white pepper powder, and brown palm sugar. Stir it well. Cook it until the spiced coconut milk is infused to the chicken.
4. Pour in coconut cream. Cook it until thickened. Remove it from heat.
5. Opor Ayam (Chicken Coconut Soup) is ready to serve.
