Opor Tahu (Tofu Coconut Soup)
Ingredients
3 pieces tofu,quartered, fried until crusted
100 grams beef skin crackers
2 salam (indonesian bay)leaves
1 lemongrass, crushed
4 lime leaves, midribs removed
3¾ teaspoons salt
5½ teaspoons sugar
1,250 ml coconut milkfrom ½ coconut
1 teaspoon tamarind juice
2 tablespoons cooking oilfor sautéing
ground spices blend:
8 cloves shallot
3 cloves garlic
5 candlenuts, toasted
1 tablespoon coriander seeds,toasted
1 cm ginger
4 cm turmeric,toasted
Cooking Steps
1. Sauté ground spices blend, salam leaves, lemongrass, and lime leaves until fragrant.
2. Add coconut milk, salt, and sugar. Stir it well. Cook it until boiling. Add in tofu. Stir it until well-cooked.
3. Add tamarind juice. Lower the heat. Cook it and stir it occasionally until the sauce is fully cooked. Add in beef skin crackers. Cook it until the sauce is absorbed to the beef skin crackers. Remove it from heat.
4. Opor Tahu (Tofu Coconut Soup) is ready to serve.
