Telur Puyuh Sambal Petis (Shrimp Sauce Quail Eggs)
Ingredients
20 hard-boiled quail eggs,fried until crusted
2 salam (indonesian bay)leaves
2 large red chili peppers,sliced
2 lemongrass, crushed
3 tablespoons petis(black shrimp paste)
1 tablespoon sweet soy sauce
¼ teaspoon salt
200 ml water
2 tablespoons cooking oilfor sautéing
ground spices blend:
6 cloves shallot
2 cloves garlic
½ teaspoon coriander seeds
Cooking Steps
1. Sauté ground spices blend, salam leaves, chili peppers, and lemongrasses until fragrant. Add in eggs. Stir it well.
2. Add petis, sweet soy sauce, and salt. Stir it well. Pour in water. Cook it until the liquid is reduced and infused to the eggs. Remove it from heat.
3. Telur Puyuh Sambal Petis (Shrimp Sauce Quail Eggs) is ready to serve.
