Ayam Bakar Petis (Shrimp-Glazed Grilled Chicken)

Ingredients

1 chicken, cut into 8 parts
3 lemongrass, (white parts only),crushed
3 lime leaves, midribs removed
600 ml coconut milkfrom ½ coconut
2 teaspoons salt
1½ tablespoons brown palm sugar
1 tablespoon tamarind juicefrom ½ teaspoon tamarind dissolved in 1 tablespoon water
5 tablespoons cooking oilfor sautéing

ground spices blend:
1½ tablespoons petis(black shrimp paste)
100 grams peanut,fried
5 curly red chili peppers
10 cloves shallot
8 cloves garlic
½ tablespoon coriander seedspowder
2 cm ginger
2 cm turmeric

Cooking Steps

1. Heat cooking oil on the pan. Sauté ground spices blend, lemongrasses, and lime leaves until fragrant. Pour in coconut milk. Keep stirring it until boiling.
2. Add in chicken, salt, brown palm sugar, and tamarind juice. Cook it until reduced.
3. Grill chicken on a grilling pan until browned. Keep glazing it with the remaining sauce.
4. Put chicken on a plate. Drizzle it with the remaining sauce.
5. Ayam Bakar Petis (Shrimp-Glazed Grilled Chicken) is ready to serve.
