Soy Sauce and Shrimp Paste Grilled Chicken
1 chicken, cut into 8 parts
1 teaspoon lime juice
2 salam (indonesian bay)leaves
3 cm ginger,crushed
2 lemongrass (white parts only),crushed
2 tablespoons sweet soy sauce
½ tablespoon salt
1 teaspoon brown palm sugar,finely chopped
¼ teaspoon white pepper powder
500 ml water
2 tablespoons cooking oilfor sautéing
ground spices blend:
1 teaspoon coriander seeds
7 cloves shallot
4 cloves garlic
2 candlenuts, toasted
¼ teaspoon cumin
1 teaspoon shrimp paste,toasted
glaze ingredients (mixed):
3 tablespoons sweet soy sauce
1 tablespoon margarine
4 red bird’s eye chili peppers,finely chopped
1. Marinate chicken with lime juice.
2. Heat cooking oil on the pan. Sauté ground spices blend, salam leaves, ginger, and lemongrass until fragrant.
3. Add chicken. Stir it until it changes colour. Add in water, sweet soy sauce, salt, brown sugar, and white pepper powder. Cook it until the spices blend is absorbed into the meat and the liquid is reduced.
4. Grill chicken and keep glazing it with the glaze mixture until browned and fragrant. Remove it from heat.
5. Soy Sauce and Shrimp Paste Grilled Chicken is ready to serve.
