Rengginang (rice crackers) is a traditional indonesian snack made from steamed glutinous rice that is fried in hot oil until crispy and has nice ivory color. when shrimp paste is added to the mixture, the taste and aroma will even get more appetizing. you will find it hard to stop munching this rengginang terasi (rice crackers with shrimp paste)!

Rengginang Terasi (Rice Crackers with Shrimp Paste)

Ingredients

500 grams glutinous rice,cleanly washed,
2 teaspoon salt
½ teaspoon sugar
150 ml water
cooking oil for frying

ground spices blend:
3 cloves shallot
2 cloves garlic
1 red chili pepper
1 teaspoon whole coriander seeds,toasted
½ tablespoon ebi(dried shrimp)
1 teaspoon terasi (shrimp paste),toasted

Cooking Steps

1. Steam glutinous rice for 15 minutes.
2. Mix well ground spices blend, salt, sugar, and the steamed rice.
3. Bring water to boil. Add in the rice mixture. Stir it until all liquid is absorbed into the rice.
4. Steam it until well-cooked and fluffy for 30 minutes.
5. Form it into balls weighed 25 grams each. Put it on a tampah (round and wide tray made from sliced bamboo). Poke holes around it with a fork until the balls are flattened and widened. Dry it in the sun until fully dehydrated.
6. Fry them in over medium heat until they are crispy and fluffy. Remove them from heat.
7. Rengginang Terasi (Rice Crackers with Shrimp Paste) is ready to serve. (yields 550 grams)
