Grilled Chicken with Coconut Glaze

Ingredients

1 whole chicken, cut into 8 pieces
1 tablespoon tamarind juice
1 teaspoon salt
2 tablespoons sweet soy sauce
4 lime leaves, midribs removed
2 salam (indonesian bay)leaves
500 ml water
100 grams grated coconut,toasted, ground

    

ground spices blend:
7 cloves shallot
3 cloves garlic
1 teaspoon coriander seeds
1/4 teaspoon white peppercorn
4 candlenuts, toasted
5 curly red chili peppers
1/2 teaspoon brown sugar
1 cm ginger
1 cm galangal

Cooking Steps

1. Bring water to boil. Add chicken, tamarind water, salt, sweet soy sauce, lime leaves, salam leaves, ground spices blend. Boil it until the chicken is well-done.
2. Add in toasted coconut. Stir until the liquid is absorbed into chicken and thickened.
3. Grill chicken until fragrant. Glaze it with the remaining sauce until fragrant. Turn it over occasionally until cooked evenly. Remove it from heat.
