Ayam Bakar Capati (Cirebonese Grilled Chicken)
Ingredients
1 chicken, cut into 4 pieces
1 teaspoon lime juice
1½ teaspoon salt
2 salam (indonesian bay)leaves
2 lemongrass, crushed
400 ml coconut milkfrom 1 coconut
3 tablespoons sweet soy sauce
ground spices blend:
5 cloves shallot
10 cloves garlic
2 teaspoons white peppercorn
1 teaspoon sugar
Cooking Steps
1. Marinate chicken with lime juice, salt, and ground spices blend. Let it set for 1 hour.
2. Put it on the pan. Add salam leaves and lemongrass. Stir it until it changes color.
3. Add in sweet soy sauce. Stir well. Pour coconut milk in two batches. Stir it when pouring. Cook it until the liquid is reduced and absorbed into the chicken.
4. Grill chicken until browned and fragrant. Glaze it with the remaining sauce when grilling. Remove from heat.
